Egg-Free Sponge Cake

Egg-Free Sponge Cake
 
2 cups Whole Wheat Flour                         1 cup Sucanat
3 tsp. EnerG Baking Pwd.                     1 tsp. EnerG Egg Replacer
1/2 cup + 2 tsp. Spectrum Shortening        1 1/3 cup water
3/4 cups Berries or Nuts                          2 tsp. Flavoring of Choice
                                                             (almond, maple, vanilla, etc.)
 
Preheat oven to 375*.  Mix the first four ingredients together.  Add the shortening (softened), water and flavor and mix for 2 minutes.  Stir in the berries or nuts and pour the mixture into a greased cake pan.  Bake for 30 minutes or until the middle is firm.
