Zucchini Salsa Recipe ~
This is a great recipe when your garden is producing more Zucchini than you can eat at the present time! This recipe will make 10-12 pts.
Day 1: In a large bowl, combine the Zuckchini, onions, green pepper and red pepper and the salt. Mix together, cover and let stand over night.
10 cups Zucchini, shredded (I don't peel it)
4 chopped onions
2 chopped green peppers
2 chopped red peppers
1/4 cup pickling salt (I just used regular salt)
Day 2: Next day, rince, drain well and put into a large pot then add mustard, garlic, cumin, lemon or lime juice, fructose, pepper flakes, salt, cornstarch, cayenne, 1 Tab. salt, tomatoes and tomato paste.
1 Tab. Salt
2 Tab. Mustard Seeds
1 Tab. Garlic Powder
1 Tab. Cumin Powder
2 Cups Lemon or Lime Juice
1 Cup Fructose
2 Tab. Red Pepper Flakes
1 tsp. Cayenne
5 Cups Chopped Tomatoes
2 Tab. Cornstarch
12 ounces Tomato Paste
Bring to a boil and simmer for 15 minutes.
Pour into serilized jars and seal.
Water bath jars for 15 minutes.
