Just Right Vegan Potato Soup
4 cups White potatoes, unpeeled and chopped into very small cubes
2 Tabs. Oil
1 Medium Onion chopped very fine.
2-3 Garlic Cloves, minced
1 cup water or clear vegetable stock
2 Vegetable Boullion Cubes
2 1/2 Cups Soy or Almond Milk (Unsweetened, Plain)
4 Tab. Vegan Butter
1/2 tsp. each of Salt & Paprika
Several Dashes of Cayenne Pepper
Steam the potatoes until tender. In a small soup pot, saute the onion and garlic in oil until tender. Then add the water and bouillon cubes and simmer until the cubes are completely dissolved, stirring occasionally.
While the bouillon is simmering, blend or process 3 of the 4 cups of potates with the milk, butter and remaining ingredients. Add the blended mixture and the extra 1 cup of steamed potatoes to the onion and bouillon and after mixing, simmer on very low heat for about 10 minutes until the flavours mingle and the soup is hot. Do not boil.
