Tofu Cheesecake

Tofu Cheesecake
Have Ready:
1 Baked Pie Shell
2 lbs. Tofu (XFirm, shelf type)              1/2 cup Honey
1/2 cup Fructose                                  2 tsp. Vanilla
1/4 cup Lemon Juice                            Pinch of Salt
1/4 cup Oil 

Pour this mixture into the baked pie crust. Bake for about 40 minutes or until small cracks start to appear on the surface. Serve well chilled.


Variations: May blend 1 c. berries (strawberries, raspberries, blueberries, etc) to mixture. May use carob chips, coconut, etc.
